Red Velvet Cake
Ingredients:
CAKE
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 TSP baking soda
1 1/2 TSP baking powder
1 TSP fine salt
1 TSP cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk (room temp.)
2 TBLSP red food coloring
1 TSP vanilla extract
2 eggs (room temp.)
FROSTING
2 bricks (16 oz) softened cream cheese
4 cups sifted powder sugar
2 sticks of butter (room temp.)
1 TSP vanilla extract
Directions:
Pre heat oven to 350. Grease and flour two 9 inch cake pans, set aside. In a large bowl mix together: Flour, sugar, baking soda, baking powder, salt and cocoa powder. In a seperate bowl mix together: Oil, buttermilk, eggs, food coloring, and vanilla.
In a stand mixer, mix the dry ingredients into the wet ingredients. Mix until just combined. Evenly distribute into the two pie pans. Bake in the oven for 20-25 minutes, or until an inserted toothpick comes out clean.
For the frosting, in a stand mixer with a paddle attachment, combine all 4 ingredients. Mix on low speed to start then on high for about 4 minutes until its smooth and fluffy. Put the frosting in the fridge and chill for about 30 minutes or more (up to 3 days)
Once the cake has completly cooled, frost the cake.
**Since this frosting is made with real cream cheese, the cake must be stored in the refrigerator, or it will spoil.
** Alternatively you can make cupcakes. Fill each cup cake liner half way. Bake in the oven for 20-25 minutes, or until an inserted toothpick comes out clean.
Farmer’s Skillet
Serves 4-5 people
Ingredients:
8-12 eggs
1 pound of bacon
1 tube of breakfast sausage (I used Jimmy Dean)
8 hash brown patties
1/2 cup of shredded cheddar cheese
Directions:
Cook breakfast sausage. Cook bacon; (I cook mine in the oven at 400 degrees for 26 minutes, turning each piece half way through). Cook the hash browns on a sheet pan lined with parchment paper, at 400 degrees for 26 minutes turning each piece halfway through.
Once everything is cooked, drain on paper towels. Chop the bacon into small pieces and add to the bowl with the sausage.
Add raw scrambled eggs to to a non stick pan. After about a minute or two, add the bacon and sausage. Cook the eggs to your desired consistency, (some people like their eggs runny, I prefer mine dry).
Line a platter with the hash browns. Add the meat and egg mixture. Top with shredded cheese. Place in the oven just until the cheese is melted.

** You can add peppers or onions, but Jim doesn’t care for onions so I left them out. You can add ham as well, but I didn’t have any so I left it out.
